This recipe, inspired by but very different from Frantzén’s famous toast, is a very lovely umami-charged start to a luxurious feast.

Ingredients
8 slices of bread
2 silver bulbs
200 gr whipped cream
65 gr black truffle, fresh
1 lemon
100 gr Parmesan cheese, finely grated
Balsamic
2 dl mayonnaise
150 gr butter for frying
Description:
- Shred the silver onion with mandolin
- Fry the onion in butter.
- Add cream and cook together.
- Grate over about 15 gr truffle.
- Season with salt and lemon. Stir in the grated cheese, 70 gr.
- Spread the onion mixture on half of the bread, and add the remaining bread. Put under pressure in the refrigerator.
- Whisk the mayonnaise together with 30 gr Parmesan.
- Fry the sandwiches in butter.
- Cut each sandwich into three rectangles. Set them on top.
- Top with mayonnaise. Drizzle over balsamic.
- Add finely grated truffle.
Pairs with:
A white crispy wine, for example Sancerre or Chablis.
