Skagen mess: One of the most beloved and now classic Swedish recipes, which is suitable both on a sunny summer day in the archipelago or on the Christmas table. Works both as a starter, as lunch or as a buffet.
4 large or 8 small portions

Ingredients:
1 can ‘hand-peeled luxury prawns’
1 tsp grated lemon peel
1 cl lemon juice
1 tbsp grated horseradish
0.5 dl dill
1.5 dl home made mayonnaise
1 crm salt
Butter-fried bread (alternatively crusts or criossant)
For extra luxury: 30 g Kalix roe roe
How to make Skagen mess:
- Squeeze the liquid out of the prawns.
- Chop the dill and grate the lemon zest and horseradish.
- Mix everything in a bowl.
- Fry the bread in plenty of butter until golden.
- Set the bread on top if not served immediately.
Pairs with:
Champagne, cold lager or a dry mineral white wine go well with it.
