French fries

A recipe for artisanally made fries with extra fine quality.

2-4 servings

Ingredients

1-2 kg floury potatoes
2 liters of water
1 tbsp vinegar 12%
1 tbsp salt

Description:

  1. Cut the potatoes into even-thick sticks.
  2. Boil the water with vinegar and salt.
  3. Cook the potatoes calmly for 8-10 minutes.
  4. Remove and dry on kitchen paper for about 20 minutes.
  5. Fry at 160 degrees for 2 minutes. Let dry on paper for about 20 minutes.
  6. Freeze the potatoes (optional).
  7. Fry for about 3 minutes, slightly longer if they have been frozen.
