A recipe for artisanally made fries with extra fine quality.

Ingredients
1-2 kg floury potatoes
2 liters of water
1 tbsp vinegar 12%
1 tbsp salt
Description:
- Cut the potatoes into even-thick sticks.
- Boil the water with vinegar and salt.
- Cook the potatoes calmly for 8-10 minutes.
- Remove and dry on kitchen paper for about 20 minutes.
- Fry at 160 degrees for 2 minutes. Let dry on paper for about 20 minutes.
- Freeze the potatoes (optional).
- Fry for about 3 minutes, slightly longer if they have been frozen.
