A wonderfully delicious pasta sauce, which is unfortunately quite cumbersome to cook. But if you have the time, it’s worth it, you get the most out of the flavors!
4-6 servings

Ingredients
4 cloves of garlic
8 tbsp olive oil
2 kg plum tomatoes, peeled and pitted
15-20 basil leaves

Description:
- Put the tomatoes in simmering water, about 30 seconds per tomato. Fish out and let cool a little.
- Pull off the tomato peel.
- Coarsely chop and fillet the tomatoes.
- Fry the garlic, lightly crushed, in the olive oil, until golden. About 4 minutes.
- Add the tomatoes and add a little salt. Bring to a boil and simmer for at least 20 minutes. Reduce to the right consistency.
- Shred and mix in the basil.
- Cook pasta in the tomato water.
- Mix the pasta into the sauce.
Pairs with:
A little garlic bread on the side, red Italian wine in the glass. And possibly burrata as a supplement, as in the picture here.
