A super tasty version of a classic grilled sandwich. A fun starter during truffle season.

Ingredients
8 slices of bread
3 silver bulbs
200 gr whipped cream
(15 gr black truffle, fresh and grated)
1 lemon
70 gr Parmesan cheese, finely grated
2 Banana shallots
250 gr cherry tomatoes
150 gr butter for frying
to mayonnaise
1 egg
2 dl oil
1 teaspoon of Dijon mustard
30 gr Parmesan cheese
2 tablespoons chives
15 gr black truffle, fresh, grated
Description:
- Shred the silver onion.
- Boil onion with cream. Season with salt, truffle and lemon. Stir in the grated cheese.
- Spread the onion mixture on half of the bread, and add the remaining bread. Put under pressure in the refrigerator.
- Whisk together the mayonnaise.
- Cut the shallots into thin rings. Put in cold water (dry before use).
- Cut the tomatoes into slices.
- Fry the sandwiches in butter.
- Cut each sandwich into three rectangles. Set them on top.
- Top with mayonnaise, tomatoes, shallots. Possibly grate some truffle.
Pairs with:
Quite an all-round taste, so both beer and wine can go well with this.
