Fettucine Al Burro e Limone

One of many varieties of lemon or citrus paste recipe. This is very creamy, with the lemon as a fresh contrast.

4-6 servings

Ingredients

500 g fettucine

2-3 cloves of garlic

75 gr butter

0.5 dl cream

2 cups creme fraiche

2 cups grated parmesan

1 lemon

1 bunch of parsley

Salt and pepper

Description:

  1. Crush the garlic cloves and brown the butter together with them.
  2. Cook the pasta (save a little of the water).
  3. Heat cream and creme fraiche in a saucepan, must not boil.
  4. Whisk in the browned butter, a little at a time.
  5. Remove from the heat and mix in Parmesan cheese.
  6. Squeeze in lemon, season with salt and pepper.
  7. Drain the pasta, mix with the sauce. Pour in some pasta water and stir.
  8. Add and top with parsley and more grated parmesan.
