Broccoli pasta

A three-ingredient paste that on the one hand is easy to make, and on the other hand has a strong and good taste! Inspiration from a Sopranos pasta dish.

Broccoli paste, recipe

Ingredients

500 g pasta, eg penne or rigatoni
2 bunches of fresh broccoli
8 sliced garlic cloves
1.2 dl olive oil
2 krm cayenne pepper or chili flakes
2.5 dl grated pecorino (alternatively parmesan)

Description:

  1. Cut the broccoli into small florets and slice the stem into small pieces.
  2. Boil 5 liters of water in a large saucepan and add 1.5 tablespoons of salt.
  3. Add the broccoli and cook for 5 minutes. Then remove it with a slotted spoon and save the water.
  4. Pour the oil into a pot or pan that holds the whole dish. Add the garlic and chilli and fry on medium heat for a few minutes.
  5. Add the broccoli and salt a little. Fry for 10 minutes (the broccoli should be completely soft and fall apart).
  6. Boil the pasta water again and cook the pasta almost ready.
  7. Save 2.5-5 dl of pasta water when filled with starch. Pour off the rest.
  8. Pour the pasta into the pot with broccoli and stir. Pour over the remaining water and the grated cheese and stir. Let it cool for about 5 minutes.

Pairs with:

Safe cards with red wine, but due to the extra vegetarian touch with broccoli, white wine also works well.
