Bolognese, or meat sauce, according to a fairly traditional method, but there are any number of varieties here. This is musty and with deep flavors, the best version according to many!

Ingredients
400 g salsiccia mince
500 g prime rib
1 carrot
1 large yellow onion
1 celery stalk
5 cloves of garlic
about 30 g of butter
2 Meat stock cubes
olive oil
0.75 dl milk
2 dl red wine
Approx 100 g tomato puree
1 can whole San Marzano tomatoes

Description:
- Finely chop or grate the sofa fritto vegetables.
- Fry the sofa fritter in a pot in plenty of olive oil on medium heat. Salt something after a while.
- Add the tomato puree and fry for a few minutes.
- Fry the salsiccia mince in a separate frying pan until crispy. Lift out and set aside.
- Fry the prime rib mince in the salsiccia fat until it has a frying surface. Lift out and set aside. Also save the fat.
- Deglaze the frying pan with a dl of wine, and pour into the pot.
- Pour over another 1 dl of wine. Let the wine reduce.
- Fry whole garlic cloves in butter in the frying pan until slightly golden. Pour into the pot.
- Add the meat with fat to the pot.
- Add the San Marzano tomatoes with a jar of water. Bring to a boil and then lower slightly.
- Add the bouillon cubes and milk.
- Simmer covered for a couple of hours.
- Remove the lid and reduce most of the liquid.
- Meanwhile cook the pasta.
- Before serving, spoon some pasta water until the sauce gets the right creaminess.
- Cook the pasta almost ready, then pour in the pot.
- Serve with plenty of parmesan sauce.

For this, you want to drink a good, preferably Italian, red wine. A Chianti is often good, but a personal favorite is a Valpolicella Ripasso.
