Bleak roe pizza

This recipe for homemade roe pizza is looking for inspiration from Stockholm’s tastiest roe pizza, namely the one at Resaurang Astoria. The ready-made pizza dough is used below to make it go quickly, but you can of course make the dough yourself.

Recipe for homemade roe pizza, astoria, roe roe starter

Ingredients

Pizza dough for 6 small pizzas
About 50 g of roe, preferably from Kalix
Crème fraiche
0.5 red onion
0.5 lemon
1 firm potato
about 100 g of butter
A few sprigs of dill

Description:

  1. Melt the butter.
  2. Peel and the mandolin potatoes.
  3. Add the potato flakes to the butter and let it steep.
  4. Finely chop the onion.
  5. Mix crème fraiche with squeezed lemon, taste so that it becomes sufficiently acidic.
  6. Place the pickled crème fraiche and roe in piping bags.
  7. Spread (unleavened) crème fraiche in the bottom of 6 unbaked pizza doughs.
  8. Add the buttered potato slices in a thin layer.
  9. Bake the pizzas according to the dough instructions.
  10. Sprinkle over chopped onion and sprinkle over pickled crème fraiche and roe.
  11. Stylish with a little chopped dill.

A hot summer day is a cold lager, otherwise champagne is recommended.
