This recipe for homemade roe pizza is looking for inspiration from Stockholm’s tastiest roe pizza, namely the one at Resaurang Astoria. The ready-made pizza dough is used below to make it go quickly, but you can of course make the dough yourself.

Ingredients
Pizza dough for 6 small pizzas
About 50 g of roe, preferably from Kalix
Crème fraiche
0.5 red onion
0.5 lemon
1 firm potato
about 100 g of butter
A few sprigs of dill
Description:
- Melt the butter.
- Peel and the mandolin potatoes.
- Add the potato flakes to the butter and let it steep.
- Finely chop the onion.
- Mix crème fraiche with squeezed lemon, taste so that it becomes sufficiently acidic.
- Place the pickled crème fraiche and roe in piping bags.
- Spread (unleavened) crème fraiche in the bottom of 6 unbaked pizza doughs.
- Add the buttered potato slices in a thin layer.
- Bake the pizzas according to the dough instructions.
- Sprinkle over chopped onion and sprinkle over pickled crème fraiche and roe.
- Stylish with a little chopped dill.
