Indian lentil stew

A vegetarian recipe for an Indian, or Indian-inspired stew. It is possible to add, for example, chicken fillets if you want a little extra protein. They are then cooked separately and served.

Ingredients

2 yellow onions
4 carrots
4 cloves of garlic
3 tbsp grated fresh ginger
4 tbsp coconut oil
3 tsp ground coriander seeds
1 teaspoon of cumin
2 kr cinnamon
8 cups dry red lentils
1000 gr crushed tomatoes
8 dl coconut milk
2 vegetable cubes
4 dl water
salt
lime

Description:

  1. Chop the onion, garlic and carrots and grate the ginger.
  2. Fry the onion, garlic and carrots in oil for a few minutes.
  3. Stir in ginger, cumin, coriander seeds and cinnamon and fry for a few more minutes.
  4. Pour in the lentils and stir, then all the other ingredients.
  5. Cook covered for about 30 minutes.
  6. Season with salt and squeezed lime.
